Advise layout garden and quote for work involved

We moved to our house last November, and the garden is still pretty much how it was then (minus some of the weeds).

There are many plants in the garden that we don't know. There is a small appletree that has one long strong branch. Looks like it needs to be cut.

We'd like some advise on possible layout, what plants to keep, which might be nice .. and someone who can possibly get the work done too.
